Crispy, Smoky Potatoes for a Satisfying Savory Snack

When you're craving something warm, crispy, and savory between meals, these Roasted Paprika Potatoes are an easy whole-food option. Bite-sized yellow potatoes are coated with paprika, garlic, onion, ground flaxseed, and arrowroot powder, then roasted until golden on the outside and tender in the center.

There's no added oil required! The potatoes are moistened with a small amount of vegetable broth before the seasonings are added. A sprinkle of fresh cilantro finishes them off, creating a simple snack that's flavorful enough to enjoy straight from the baking sheet.

Potatoes Provide Satisfying Complex Carbohydrates

Potatoes sometimes get reduced to simply being a source of carbohydrates, but whole potatoes offer much more. They naturally provide potassium, vitamin C, vitamin B6, and fiber, particularly when the skin is left intact.

Ingredients
 

  • 5 ½ cups (440g) Potatoes (chopped into bite-sized pieces) - About 4 medium-sized potatoes
  • ¼ cup (1075g) Vegetable Broth, Low Sodium - Available in 32-ounce cartons
  • 2 tbsps (20g) Flax Seeds, Freshly Ground - Available in 10-ounce bags
  • 2 tsps (48g) Arrowroot Powder - Available in 16-ounce bags
  • 1 tsp (10g) Paprika - Available in spice jars
  • ½ tsp (14g) Garlic Powder - Available in spice jars
  • ¼ tsp (3g) Onion Powder - Available in spice jars
  • 2 tbsps (1g) Cilantro (chopped) - Available in spice jars

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Place the potatoes in a large mixing bowl and drizzle with the vegetable broth. Toss to coat. Sprinkle with the ground flaxseed, arrowroot powder, paprika, garlic powder, and onion powder, then toss again until the potatoes are evenly coated.
  • Transfer the potatoes to the prepared baking sheet and spread them into an even layer. Roast for 40 minutes, tossing halfway through.
  • Garnish with the chopped cilantro. Serve and enjoy!

Notes

  • More Flavor: For additional flavor, squeeze fresh lemon juice over the potatoes after roasting. For a smoky variation, use smoked paprika instead of regular paprika.
