- 4 cups (820g) Butternut Squash (chopped into small cubes) - About 1 medium-sized squash
- 4 cups (280g) Mushrooms (sliced) - Available in 8-ounce containers
- 4 cups (84g) Kale Leaves (chopped) - Available in 12-ounce bags
- 2 tsps (2g) Dried Basil - Available in spice jars
Instructions
- In a medium-sized pot, bring the water to a boil. Add the buckwheat, reduce the heat to low, cover, and simmer for 15–20 minutes, or until the water is absorbed and the buckwheat is tender.
