  • 1 cup (180g) Tomato (diced) - About 1 ½ medium-sized tomatoes
  • â…” cup (60g) Jalapeño Pepper (diced) - About 4 small-sized peppers
  • ¼ cup (38g) Avocado (cubed) - About 1 small-sized avocado
  • 8 cups (240g) Baby Spinach - Available in 16-ounce containers

Instructions
 

  • In a large mixing bowl, combine the black beans, lentils, red bell pepper, tomato, jalapeño pepper, avocado, spinach, and cilantro.
  • In a small bowl, whisk together the lime juice, vegetable broth, cumin and black pepper.
