  • 6 cups (1326g) Vegetable Broth, Low-Sodium - Available in 32-ounce cartons
  • ¾ cup (146g) Yellow Onion (diced) - About 1 large-sized onion
  • 3 cups (465g) Carrot (diced) - About 6 ½ large-sized carrots
  • 3 (9g) Garlic (cloves) - About 1 small-sized bulb
  • 1 tbsp (5g) Ginger (peeled, minced) - Available in 3-ounce bags
  • 3 tbsps (49g) Tomato Paste - Available in 6-ounce cans
  • 3 tbsps (46g) Lemon Juice - Juice from 1 medium-sized lemon
  • 1 ½ tbsps (10g) Curry Powder - Available in spice jars
  • 1 tbsp (9g) Turmeric - Available in spice jars
  • â…“ tsp (1g) Black Pepper - Available in spice jars
  • ½ cup (98g) Brown Basmati Rice - Available in 32-ounce bags
  • ¾ cup (144g) Red Lentils, Dry - Available in 24-ounce bags
  • 3 tbsps (7g) Thyme (leaves) - Available in 0.5-ounce containers

Instructions
 

  • In a soup pot, warm a small amount of the vegetable broth over medium-high heat. Add the onion, carrots, and cayenne pepper, if using. Sauté until the onion and carrots begin to soften. Add the garlic and ginger and cook, stirring, until fragrant.
  • Add the tomato paste, lemon juice, curry powder, turmeric, and black pepper. Add a splash more vegetable broth as needed to prevent sticking. Cook, stirring, for a few minutes.
  • Add the remaining vegetable broth and bring to a boil. Add the brown basmati rice and return to a boil. Reduce the heat to medium-low and simmer for 15 minutes.
  • Add the red lentils and thyme leaves. Continue simmering for another 15 minutes, or until the rice and lentils are tender. Add additional broth or water as needed to reach your desired consistency.
  • Taste and adjust the seasoning as needed. Ladle into bowls, serve, and enjoy!

Notes

  • Leftovers: Store leftover stew in an airtight container in the refrigerator for up to 4 days. Reheat before serving.
  • Consistency: Add additional vegetable broth or water during cooking if you prefer a thinner stew.
