This Ice Cream Is Bananas!

It’s amazing that a single-ingredient ice cream exists, but it does! When frozen and blended, bananas create the perfect mix of sweet flavor and creamy texture.

Bananas don’t get a lot of hype or coverage in the nutrition world, and are sometimes even vilified for having too much sugar.

Bananas bring a lot of nutritional value! They are most known for having potassium, which is true, but they are also a good source of vitamins A, B complex, and C, as well as manganese and fiber.

Contrary to widespread misconceptions about bananas and diabetes specifically, studies show that bananas contain a variety of compounds (such as phenols, saponins, alkaloids, sterols, and flavonoids) that slow glucose absorption and therefore create lower fasting blood glucose and lower A1c.

A Sprinkle of Cinnamon: A Little Goes A Long Way

When you sprinkle cinnamon on top, not only do you create one of the best flavor combinations (rivaling cinnamon’s other best friend, apple!) but you also boost the nutritional value of the meal even more.

Cinnamon is the most widely-used spice in the world, and also one of the most beneficial for your health. The compounds found in cinnamon give it antioxidant, anti-cancer, anti-diabetic, and immune system-strengthening effects. It helps to prevent a wide variety of diseases. And it’s incredibly potent! Just a teaspoon of cinnamon goes a long way.

Ingredients
 

  • 2 cups (450g) Banana - About 4 medium-sized bananas
  • 1 tbsps (10g) Chia Seeds (freshly ground) - Available in 16-ounce bags
  • 1 tsp (3g) Cinnamon - Available in spice jars

Instructions
 

  • Place frozen banana chunks into a blender or food processor. Blend until smooth, ice-cream consistency, adding 1 tbsp of water at a time.
  • You can add the ground chia seeds and cinnamon into the blender or top your nice cream with them. Enjoy!

Notes

  • How to Freeze Bananas: To freeze your own, wait until bananas ripen and develop spots on the peel, then remove the peel, cut into 2 inch sections, place into a freezer-safe container, and allow them to freeze for 6 hours or overnight before making your banana ice cream.
