Ingredients
 

  • 1 cup Cauliflower Rice
  • 1 cup Broccoli, steamed
  • 1/2 cup Black beans
  • 1/2 cup Zucchini, shredded
  • 1/2 cup Carrots, shredded
  • 1/2 cup Tomatoes, diced
  • 1/2 cup Bean sprouts
  • 1/2 cup Corn
  • 2 cup spinach
  • 1 Lemon, juiced
  • 1/2 tsp Dill

Instructions
 

  • Cook the cauliflower rice according to package directions, or cook lightly in a skillet over medium heat for 5–7 minutes until tender. Set aside.
  • Steam the broccoli until bright green and fork-tender (about 4–5 minutes), then set aside to cool.
  • Prepare the fresh ingredients: slice the zucchini and tomatoes, shred the carrots, and rinse and drain the black beans and bean sprouts.
  • In a large bowl, arrange the cauliflower rice as the base. Add the broccoli, black beans, corn, shredded carrots, zucchini, tomatoes, spinach, and bean sprouts.
  • Squeeze fresh lemon juice over the bowl and sprinkle with dill. Toss everything together before eating, or enjoy as a composed bowl.
