Wild Rice Quinoa Salad

Ingredients
  

  • 2 cups cooked quinoa
  • 1 cup cooked wild rice
  • 2 medium tomato seeded and diced
  • 1/2 cup chopped parsley
  • 1/2 cup chopped green onion
  • 1/2 lemon juiced
  • 2 cloves garlic minced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 2 cups spinach chopped

Instructions
 

  • Place the quinoa, wild rice, tomato, parsley, spinach and green onion in a bowl and toss.
  • To make the dressing: mix together the lemon juice, garlic, cumin, and coriander. Pour over salad and mix well.

Notes

Instead of spinach use any greens such as arugula, or any type of lettuce mix.
