Ingredients
- 3 cup Chickpeas
- 3 cup Vegetable broth, low-sodium
- 1 cup Red Bell Pepper
- 3 cup Onion
- 3 Garlic Cloves
- 1 Bay Leaf
- 1/8 cup Lemon Juice
- 2 tbsp Parsley
- 1/4 tsp Black Pepper
Directions
Place all the ingredients into a large pot.
Bring to a boil. Reduce heat and simmer for 20 minutes.
Remove the bay leaf.
Blend the soup using a high-powered blender with room for steam to escape, or an immersion blender. Blend until the soup is a smooth puree.
Place into a bowl and top with more fresh parsley and pepper if desired,
