  • 3 cup Chickpeas
  • 3 cup Vegetable broth, low-sodium
  • 1 cup Red Bell Pepper
  • 3 cup Onion
  • 3 Garlic Cloves
  • 1 Bay Leaf
  • 1/8 cup Lemon Juice
  • 2 tbsp Parsley
  • 1/4 tsp Black Pepper

Directions

  • Place all the ingredients into a large pot.
  • Bring to a boil. Reduce heat and simmer for 20 minutes.
  • Remove the bay leaf.
  • Blend the soup using a high-powered blender with room for steam to escape, or an immersion blender. Blend until the soup is a smooth puree.
  • Place into a bowl and top with more fresh parsley and pepper if desired,
